1 pound boneless chicken thighs, cubed
1 egg, beaten
1 tablespoon soy sauce
1 small cup corn flour

8 to 10 dried hot chilli peppers

Sauce:
1 tablespoon corn flour
1 - 1/2 rice wine
2 tablespoons sugar
2 tablespoons soy sauce
2 garlic cloves, minced
1/2 cup chicken stock (broth)
1 teaspoon ginger root, minced

vegetable oil for frying, as needed
Preparation:
1. Blend the chicken cubes with the egg, soy sauce and corn flour and coat well.
2. In a separate bowl, mix the sauce ingredients and set aside.
3. Add enough oil to the wok to deep - fry the chicken cubes, or alternatively use a deep fryer. Fry the chicken until it's crispy and cooked through. Remove and drain on paper towels.
4. Drain and clean the wok and add 2 tablespoons of oil.
5. When the oil is hot, add the onions and peppers. Stir-fry for about 1 minute, add the sauce to the wok and stir well.
6. Add the chicken and stir well through. Cook until the sauce thickens
